Coconut Rum Punch Recipe

Have you ever had a good rum punch? If not, consider this your introduction! I don't know about you, but I love coconut rum anything, and this is no exception! This cocktail is fruity, sweet, and delicious

Coconut rum punch is that it's a drink that's pretty obscure. But it shouldn't be! Honestly, for fruity tropical drink lovers, it's pretty much a holy grail, and you'll soon see why!









This punch recipe was actually one of the first "proper" drinks I've ever had. I went to a Chinese restaurant with my grandparents when I turned 21, and they ordered it for me.  It's similar to a pina colada, but tastes so much different, because it's made with blended chunk pineapple and coconut cream... the coconut cream is the secret ingredient!

The fat content in it obviously makes it delicious. But to me, the magic of this drink is because coconut cream is an ingredient that just isn't used a lot. So when you DO use it, the flavor is distinctive and special. It's totally different than using chopped coconut or coconut milk.

The smell was totally nostalgic for me... made me feel like I was back sitting in that big booth again with Grammy and Nootzie... staring at paintings of the Great Wall of China, and crunching on those appetizer noodles.


PS, I usually prefer straight-up or rocks blended drinks, but this one is a rare exception!

RECIPE FOR TWO

1 to 1 1/2 heaping cups of chunk pineapple
7 Tbs coconut cream
2 Tsp sugar
3 oz rum

+ Blend with about one cup ice
++ I blended everything without ice, and just threw in some cubes afterwards.  I realize that's unconventional, so don't do it that way unless you wanna mainline the drink like I do :P
+++ Also very tasty without the rum :)

  1. Aww this looks good! I'm normally not into pineapple but if there's rum in it.. might make a good enough difference! lol

  2. I often notice a seasonal shift in what I'm eating, but I haven't had a single pumpkin flavored anything this year. I don't know if I got too burnt out last year, or if it's because it's been in the 90s all month. Either way this sounds super good and right up my alley for this weekend!

  3. Eek how I love pineapple! I say it goes with the holidays, fruit baskets and fruit cakes and whatnot I guess hah :) This looks so light and creamy, I can't wait to try it!
