these eggs au gratin are a tradition in our family. we've been making them for christmas since i can remember. of course, they're not strictly for the holidays... they're perfectly yummy any time. maybe you can even make them for the new year!
put it this way... if you like cheese and eggs, these are definitely your thing.
**also note- we always double the recipe... so if you're planning on making it with the specified amounts, you'll probably need more than one baking dish (we used the pie dish seen in the last picture to cover the overlflow.)
INGREDIENTS
1/2 cup butter
2/3 cup flour
4 cups hot watter
2 cups milk
4 teaspoons instant chicken bouillon
2 cups shredded cheddar cheese
1 teaspoon worcestershire sauce
1/2 tsp pepper
24 hard boiled eggs, cut lengthwise into halves
2/3 cup parmesan cheese
2/3 cup dry breadcrumbs
4 tbs butter, melted
DIRECTIONS
~ heat 1/2 cup margarine in 4-quart saucepan over low heat until melted.
~ stir in flour. cook, stirring constantly until smooth and bubbly
~ remove from heat
~ stir in water, milk, and bouillon
~ heat to boiling, stirring constantly.
~ boil and stir 1 minute
~ add cheddar cheese, worcestershire sauce, and peppper
~ cook, stirring constantly, until cheese is melted
~ arrange eggs, cut sides up, in ungreased rectangular baking dish
~ top with cheese sauce
~ mix parmesan cheese, bread crumbs, and 4 tbs butter and sprinkle over the top
~ bake uncovered for 20-25 minutes in 400 degree oven, until hot and topping is brown.
