the first time i had quiche was in a french restaurant in epcot center when i was twelve. i had this weird obsession with france, and was intent on trying this rich, delicious food. now that i'm all growed up, i suddenly remembered one day that i can make it for myself. so that's what i did!
Ingredients
~ 8 large eggs, beaten
~ 2 cups half and half
~ Salt and pepper
~ 2 heads broccoli
~ 6 oz Swiss cheese (shredded, or ripped apart if they are slices)
~ 2 frozen pie crusts
Note- if you found one big deep dish pie crust, rather than two small ones, it might be good. my supermarket only sells the shallow-dish pans for some reason. I need two of them to contain all the ingredients. And when I use those, I find that this quiche has a bit too much crust for my taste.
But I can't complain too much... come on, we're talking about quiche, here.
Directions
~ Preheat the oven to 375 degrees F.
~ Beat the eggs, half and half, salt, and pepper in a bowl.
~ Layer broccoli and cheese in the bottom of the pie crusts
~ Pour the egg mixture on top.
~ Bake for 35 to 45 minutes until the egg mixture is set.
~ Enjoy!

Quiches are the perfect summer food in my book. Easy to pop in the oven after a long day and also easy to bring along to picnics:D This one looks great!

Quiches have always been a favorite with my family. They're easy, tasty, and it actually freezes and reheats pretty well.
