Freezer breakfast burritos

I don't know what it is, but I've been going a little crazy thinking about meal planning lately. I can't tell you how many days I wake up, forget to eat, end up starving and chomping whatever down at 2pm. The other night, I got really excited and started poring through pinterest, looking for recipes.

I came across this link- a pregnant woman preparing a month's worth of meals in advance so that she wouldn't have to cook when she had the baby. And she did it all with $135!

Her particular motivation was pregnancy, but I feel like this would also be great for those of us who are lazy/ busy.

I scrambled 6 eggs, and used about a 1/2 can of black beans, and a smattering of cheddar cheese. This made about 7 burritos. I suppose I could've gone heavier on the beans and lighter on the eggs in each roll, in order to make more. Next time.

Then I rolled the tortillas, put them in sandwich baggies, and stuck them in the freezer! Note- A sandwich bag will fit about 3-4 burritos.

Then when you're ready, pop 'em in the microwave for about a minute each. Bam- a quick and healthy-ish breakfast ready for every day of the week!

As for cost-wise, I didn't do as good as she did (35 cents per meal.) I used farmer's market eggs (expensive, but ethical!) Still- it ended up being less than $1 per burrito. That's nothing to sneeze at.

  1. OMG this is amazing! I've been feeling the same way lately. I keep whining that I need a personal chef because when I don't meal plan I make the worst choices. I totally know that not eating until 2pm when you are about die feeling too. Thanks for sharing! I love how she spent $135 too!

  2. I've been thinking about meal planning a lot too. But I need to eat all the leftovers from the freezer first before I can fit anything else in there :)
