Lavender Lemon Iced Tea Recipe

I made this iced tea the other day, sort of by mistake.  It was meant to be lemonade, but I did not have enough lemons on hand!  So I took a look at what was in my cupboard, and made a quick decision to do iced tea instead.





NOTES

This iced tea is still pretty lemony, but not quite tart enough to qualify as lemonade.  If you want a more tea-y drink, you can always reduce the amount of juice added.  Also, it's made with a green tea base, and came out a bit mild with the steeping time noted (for a stronger, tea you can always steep longer.)

Still... any fresh-made summer drink makes me happy :)

INGREDIENTS

+ 5 Tbs loose green tea (or about 5 tea bags)
+ 3 Tbs loose lavender
+ 1/4 cup honey
+ 1/2 lemon, juiced (produces about 2 tbs of juice)


DIRECTIONS

+ Boil two cups of water
+ Stir in honey
+ Add tea leaves and let steep for 5-6 minutes
+ If leaves are loose, strain them out.  If you used a tea ball or bags, remove them.
+ Add 2 more cold cups of water
+ Add lemon juice

Serves four.
